Tetsu Kasuya is a Japanese barista who won the 2016 World Brewers Cup with a deceptively simple idea: split a pour-over into a first 40% that sets sweetness and brightness, then a 60% that sets strength. His 4:6 method made precise, repeatable brewing something anyone can follow, and he keeps developing recipes through his company, Philocoffea.
